Famed for its signature tri-cultural blend of Japanese, Brazilian and Peruvian flavours, SUSHISAMBA elevates its National Day weekend offerings with an exclusive holiday edition of its signature brunch. Perched on the top floors of Capital Tower, the sky-high dining destination invites guests to indulge in a lively afternoon framed by live performances, a skyline view and a feast infused with local nuances. At the heart of the culinary lineup is a dedicated live station featuring Australian short ribs alongside roasted whole chicken and Hainanese rice. Local inspiration carries through to a selection of specials, from Crab leg Seviche, SAMBA Rojak to dessert spreads with Pineapple Coconut Tarts, Peranakan Bonbon and Sago Gula Melaka Trifle.

For a mid-afternoon celebration, The St. Regis Singapore presents an exclusive National Day afternoon tea in collaboration with acclaimed local pastry chef Janice Wong. Reimagining nostalgic hawker staples through an elevated, fine-dining lens, the limited-time menu opens with savory creations such as an elevated Chwee Kueh paired with a fragrant mushroom broth, a delicate Ginger Sesame Chicken Roulade on potato blini and a buttery, spiced Wagyu Rendang Puff. A selection of sweets showcases intricate local nuances, from a delicate Kueh Salat Mousse layering aromatic pandan rice beneath silky coconut custard to an Osmanthus Sweet Bean Pastry and warm Pandan Kaya Mochi Scones, served alongside clotted cream and a range of jams and fruit caviar.

The festivities continue at The St. Regis Bar, where Head Bartender Kelvin Saquilayan debuts the Time After Time cocktail menu. Expressed through the dual lenses of New York and Singapore, the concept pairs American drinking trends with familiar Southeast Asian flavours. Leading the collection is The Straits Mary — a bold, localised evolution of the hotel’s signature Bloody Mary built on bak-kwa-infused bourbon and tomato juice, sharpened with chili padi, sansho pepper, black pepper and gochujang. Labyrinth

Transitioning from afternoon into the evening, Labyrinth offers a deep-dive exploration of local gastronomy, taking inspiration from local Singaporean dishes. Helmed by Chef Han Li Guang, the restaurant holds the No. 40 spot on Asia’s 50 Best Restaurants 2026 list. Labyrinth offers a different take on heritage and nostalgia with a multi-course set featuring a rotating array of delicate small plates designed to take guests on a nostalgic culinary journey. Signature dishes include the Chilli Crab pie — served in a whimsical takeaway carton and the Hainanese Chicken Rice Donabe — a homage to Chef Han’s grandmother’s recipe, served in an earthen clay pot infused with chicken fat and aromatics

Pangium

Pangium marks its fourth anniversary with an even deeper exploration of Peranakan cuisine. Located in the Gallop Extensions of the Singapore Botanic Gardens, the restaurant is led by Chef Malcolm Lee, who is devoted to researching, refining and rediscovering the essence of Peranakan cuisine. The restaurant focuses on traditional recipes and labour-intensive methods that take hours to execute. The dinner menu opens with a sequence of small bites, featuring a soft Jiu Hu Char Soon Kueh packed with braised turnips and shredded cuttlefish, a crispy house-made Ngo Hiang and a warm Pang Susi bun stuffed with peppery minced meat.

The meal then shifts to a family-style main course inspired by Tok Panjang, the traditional Peranakan long-table feast designed for communal dining. Highlights from the feast include Otak Blangah baked in banana leaves over open fire, Rawon beef stew and Pangium’s signature Nasi Ulam — a fragrant rice dish mixed with over twelve fresh local herbs and wild botanicals. A notable addition to Singapore’s dining landscape, Asin is an intimate 22-seat restaurant tucked away on Carpenter Street. Taking its name from the translation for “Salt” in Tagalog and Indonesian, the concept focuses on the historic trade routes of maritime Southeast Asia — using ancient salt-curing, fermentation and preservation techniques to unlock deeper, more complex flavour profiles.
The eight-course dinner menu opens with an inventive dim sum interpretation, such as the Yum Oyster Omelette, a crispy sphere packed with grilled baby oyster, light egg floss and a tangy Thai basil chili emulsion. Another starter is the Asam Tomato Hamo, which pairs a pike conger eel with a facto-fermented tomato broth, tamarind and aromatic perilla oil. The main course, dubbed the “Black Beauty,” is a local black emperor fish wrapped around tender belly meat and coated with an aged Hua Diao wine, wild jungle garlic and caramelised soy.

Jigger & Pony


A true landmark of Singapore’s cocktail scene, Jigger & Pony is currently ranked No. 7 on Asia’s 50 Best Bars 2026. Located within Amara Hotel Singapore, the bar is renowned for its unique reinterpretations of classic cocktails and presents its drinks through a signature magazine-style menu or “menuzine”. Their latest menu, titled BLOOM, explores the themes of growth and transformation across 12 inventive cocktails. The menu highlights bold and unexpected flavour combinations, such as the Mango Margarita — a blend of mango and Patron Silver tequila with a subtle kick of Sichuan peppercorn and the Strawberry Matcha Cloud, which layers Roku Gin with clarified strawberry milk punch, finished with a crown of matcha cream.

Founded by local music collectives behind Darker Than Wax and Ice Cream Sundays, Dean Chew and Daniel O’Conner opened Offtrack in early 2022 and is currently ranked No. 15 on Asia’s 50 Best Bars. Inspired by the owner’s travels, Offtrack has quickly become a favourite spot amongst the creative community with its retro-inspired aesthetic. The interior space features a vinyl record that spins through a custom sound system. Beyond their curated space, head bartender Joash Conceicao is the mastermind behind his reimagining of classic cocktails, including the house Espresso Martini, which is made with orange blossom and dry curaçao for a fruiter edge, while the Rum and Raisin Manhattan is made with rum, PX sherry and hazelnut. Offtrack also features an array of easy-drinking cocktails that include a local twist such as Tea Milk punch, a smooth and clarified cocktail laced with aromatic local tea and the nostalgic Grasshopper, a creamy, mint-and-cacao creation with fresh mint.

Nestled within Shangri-La Singapore, Origin Bar is ranked No. 43 in Asia’s 50 Best Bars 2026. The bar’s concept revolves around taking guests on an immersive journey through Singapore’s historical trade routes and district origins. The bar’s grand architecture features soaring mahogany arches, warm ambient lighting and a dramatic central bar counter that is crafted with wood-and-glass paneling inspired by early 20th-century train terminals, including Tanjong Pagar Railway Station, all set against a rich colour palette of deep peacock blues and forest greens.

The bar menu serves as a sensory map of the island, using local spices, tropical fruits and native botanicals to narrate the stories of Singapore’s neighbourhoods. Highlights ranges from Nutmeg & Spice, a spirit forward drink honouring Orchard Road’s historic roots as a spice plantation to innovative creations such as the Affogato Colada, a mash up between Italian Affogato, a Puerto Rican Pina Colada and Hong Kong style Yuan Yang and the Celestial 75, which is a playful fusion of a French 75 and a 7-Eleven Slurpee that is served in a custom spacecraft-inspired vessel.
